Roast Leg of Lamb
○ Leg of Lamb
○ Salt & Pepper
○ Herbs - rosemary, thyme, sage, oregano
○ White wine
Score the lamb in a chess-like pattern all around the lamb.
Rub the lamb with olive oil, garlic, herbs, wine, salt, and pepper until it is completely coated.
Cover and marinate the lamb in the refrigerator.
Preheat oven to 350 degrees F°.
Transfer the lamb to a pan with a rack and cook to the desired internal temperature.
Remove the lamb from the oven and let it rest for 15 minutes before slicing and serving.
